White bread sandwich with egg cookies

Yeah, you read it correctly.
I swear I saw this somewhere, then I couldn’t find it again, but it’s so simple it’s committed to memory. It’s so simple I should’ve done it already!

Shortbread cookie dough I think it’s called. Anyways it’s really very basic;
150 g butter
4 dl flour
1 dl sugar
2 teaspoons vanilla powder

Mix until smooth dough.

Shape to sandwich like cookies. The will not expand much.

Place in oven 200 degrees Celsius for 11 minutes, slightly longer than for “normal” smaller cookies.

Let the cookies cool.

Frosting: mix 1 egg white with 3 dl icing ugar and a dash of lemon juice.

Place apricot half on frosting.
