My Favourite Apple Cake

In our garden we have three apple trees, two of which give plenty of apples each year. One of them is a transparante blanche tree.


These apples I sometimes use in apple cakes. When they are really ripe, they are almost transparent and when baked in the oven they become so soft you can actually mistake them for apple flavoured vanilla pudding.

Here comes the recipe for my favourite apple cake:

3 eggs & 3 dl of sugar until it’s fluffy and light.

3 dl flour
2 tbs baking powder
1 tbs vanilla powder
1 tbs ground cinnamon

50 g butter
1 dl milk

Butter + breadcrumb before adding the mixture , so that the cake will not stick.


Peel apples (1 or 2 depending on size) and slice them then place slices in mixture.  Bake in oven 250 c for 35-40 minutes or until it has released the edge and is no longer sticky inside.
